dinner for two


Going out to eat is fun but it can get old after a while...and expensive...and you start to feel like a million pounds and that you're not really putting anything good into your body. Therefore when the boy suggested we cook dinner this weekend I was all for it.

I had recently seen an article in the July issue of Real Simple (a magazine which I'm beginning to love) which featured recipes for appetizers, main & side dishes and desserts that only required three simple key ingredients (as well as your standard spices and oils that you would already have in your cupboard). The amazing thing about these recipes is that they're super simple to execute and when you're finished the dish looks like you put in a lot of effort when you really didn't. Psst, hello easy way to impress your guests!

We made:
red curry-glazed salmon
grilled sesame sweet potatoes
spicy sauteéd green beans
dulce de leche mousse

Everything was so delicious and we were really proud of ourselves for pulling off a full meal like this. I've always been intimidated about cooking salmon, but not anymore! I will totally be making this again as well as trying some of the other amazing recipes!

As a side note: I don't have a grill so we cooked the potatoes in the oven until they were soft and they were just as delicious. We also nixed the sesame seeds and to be honest the sesame oil wasn't even necessary either (just depends on how you like your sweet potatoes). We also used white sweet potatoes instead of red, both are equally yummy!
